No cook oatcakes that make a great afternoon snack and satisfy a need for something sweet. Has protein, carbs and fibre.

Ingredients

    1/2 c. oat flakes, organic

    1/4 c. coconut oil

    1/4 c. raisins

    2 oz. walnuts

    1/2 c. shredded coconut

    1/4 c. honey, raw

    1 1/2 cacao powder

Directions

Melt coconut oil. Pound the nuts until small/fine pieces. Add all dry ingredients to the melted coconut oil and mix well. Add honey and re-mix. Have a taste of the mixture and add stevia or other approved sweetener if a sweeter taste is required. Divide mixture into 8 paper cake cases. Compress each oatcake in its case and refrigerate for at least 30 mins. They are now ready to eat. Any leftovers should be kept in the fridge as the coconut oil will remelt at room temperature and the oatcakes will fall apart. A great recipe to make with children. This is my first recipe on BD and I hope I calculated the carbs/proteins correctly. 1/4 cup of cocoa powder = 1 carb, whereas 1-2 teaspoons is not 1/4 cup, but I think this is evened out by the 1 carb attributed to the honey. More cocoa powder could be added but this amount is just right for me as it doesn't taste bitter.
