Perfect balance, fabulous taste, and 100% healthy cookies. You can even use them as muesli if you crumble them up.
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
sea salt to taste
1/3 c. honey, raw
1/4 coconut oil
1 tsp. vanilla extract
1 c. oat bran
2 egg
1 c. almond meal
1/2 c. raisins
1/2 c. walnuts
Preheat oven to 350ºF. Line a baking sheet with parchment paper.
Combine all the ingredients in a big bowl, and mix until everything is fully incorporated. Spoon onto baking sheet - make sure you have 16 of them - and press down with a form. Bake for about 15 minutes - keep an eye on them, they cook quickly.
Let cool and serve in one of the following ways: as cookies with tea or coffee, as breakfast muesli with fruit and Greek yogurt (which keep the balance of proteins and carbs perfect), or as dessert with strawberries and yogurt... and even a tiny bit of good organic chocolate grated on top.
