Delicious alternative to muffins made with flour and sugar. I have been making these muffins for ages and still enjoy them, particularly at breakfast time.
1/3 c. oat bran
1 egg
1 stevia packet
1 tsp. baking powder
cinnamon to taste
1/3 c. cottage cheese
Preheat oven to 375ºF. Grease 3 cups of a muffin pan.
Beat egg. Add oat bran, baking powder, cottage cheese, stevia, and cinnamon. Mix well.
Divide batter among the 3 greased muffin cups. Bake for 20 minutes.
Allow to cool slightly before removing the muffins from the pan.
