It's a pancake made with Greek Yogurt, egg, oat bran and baking powder. it is a great breakfast dish and works well with egg, bacon, smoked salmon, gravelax or cottage cheese and honey
1 tbsp. Greek yogurt
1 egg
1 tsp. baking powder
2 tbsp. oat bran
1.0 Beat the egg with the yogurt 2.0 Add the oat bran and baking powder and beat until fairly smooth 3.0 Heat 1/2 tsp butter or cocnut oil in nonstick pan. 4.0 Pour the batter into the pan and lower the heat. 5.0 Cook until bubbles appear on the pancake 6.0 Using a wide spatula, flip the pacake over and cook for about another 2 minutes on the other side
Serve with cottage cheese and fruit or with smoked salmon.
