Nut Butter Banana Oatmeal

Warm and comforting but a super healthy way to start the day!


    1/4 c. old-fashioned oats

    1 tbsp. white quinoa

    1 c. water

    1/4 tsp. cinnamon

    1/2 med. banana

    1 tbsp. walnuts

    2 tbsp. nut butter

    1 tbsp. chia seeds

    1/2 tbsp. coconut oil


Put oats, quinoa, cinnamon, and water in a pot and bring to simmer. Simmer for 20 minutes or until oats are cooked (mushy looking) and quinoa has come undone. Once fully cooked, stir in chia seeds, nut butter, and coconut oil (separately). Top with walnuts and diced banana. Make sure to chop banana well or mash it and stir it in well. If you do this, you will not need sweetener.
