This is a great grab & go lunch. Since it has no greens, the salad will stay fresh when refrigerated till lunch. Delicious!
1 c. cucumber
1 lemon
1 tsp. extra virgin olive oil
1 grape tomatoes
1/2 c. cooked chickpeas
sea salt & black pepper to taste
1 c. green bell pepper
Slice cucumber, peeled or unpeeled, & cut each slice in half. Dice bell pepper & tomato. Add 1/2 cup garbanzo beans. Add dressing. Mix all ingredients well & add salt & pepper to taste.
Add 2 oz. of chicken (2 Proteins) for a balanced lunch.
