No-Shell Chicken "Tacos"

A fun take on a taco. The best part of this recipe (besides how yummy it is) is that it can EASILY be tailored to your specific needs. All ingredients can be increased or decreased to fit your plan!


    4 oz. cooked chicken

    1/2 med. red bell pepper

    3 romaine lettuce

    1 oz. goat cheese

    1 tsp. butter

    sea salt & black pepper to taste


Put chicken (pulled apart or cut into small pieces) into a bowl. Stir in melted butter and seasonings. Set aside.

Carefully spread 1/3 of the cheese onto each leaf (be gentle so you don't tear the leaves). Cut bell pepper into strips and then cut in half to make shorter. Add 1/3 of the bell pepper strips to each leaf, and top with 1/3 of the chicken mixture.

Fold leaves in half like a taco, and enjoy!

All ingredients in this should, of course, be organic if possible. Cheese and butter should be raw and come from grass fed animals, if possible. And of course your chicken should be hormone and antibiotic free and come from chickens that were happy in life. :)
