Coming from the south, corn bread is a staple in my family, so I had to come up with a healthier version, and this is by far the best "corn bread" I have ever had, and my family absolutely loves it.
1/2 c. millet flour
1/2 c. quinoa flour
3 tsp. baking powder
1/2 tsp. sea salt
1/2 tbsp. stevia
3/4 c. water
1 tbsp. coconut oil
Preheat oven to 350°F. Mix all ingredients in a bowl. Pour in greased loaf pan. Bake for about 30 minutes or until firm, and no longer jiggly. Slice and enjoy!
