No carb "Popcorn"

This is the BEST snack food I have come across! I was skeptical at first, but once I tried it, I was hooked! Even my husband loves it. I take it with me to the theatre when we go. I didnt list the number of servings, because to be honest... i usually eat the entire thing myself! I dont tend to worry too much about the fats, as they do not seem to affect my weight and well being as much as the carbs do.


    1 head cauliflower

    2 tbsp. extra virgin olive oil

    1 tsp. sea salt

    black pepper to taste


Preheat oven to 400 degrees. Line a shallow baking pan with parchment paper (I find this helps to make the snack crispier and it doesnt stick). Cut the cauliflower into little pieces, and place in mixing bowl. Add oil and seasonings, mixing well. Spread the cauliflower pieces evenly onto the pan and place in oven. Turn the mixture over a few times during the baking to ensure the pieces get nice and brown. Cauliflower carmelizes like onions do. This is a very delicious alternative to popcorn or other snack foods. It has an almost sweet taste. The longer you cook it, the better. I like mine almost burnt!! Enjoy:)
