Great cookies with little guilt.
2 tbsp. water
1/2 tsp. vanilla extract
1 1/2 tsp. coffee grounds
2 tbsp. cacao powder
3/4 c. old-fashioned oats
6 tbsp. oat flour
1/4 tsp. sea salt
1/4 tsp. baking soda
1/4 c. coconut sugar
1/4 c. chocolate chips
1/4 c. coconut oil
In a medium bowl, combine dry ingredients. In a separate medium bowl, combine liquid ingredients.
Combine dry and wet ingredients and mix until thoroughly combined.
Transfer to a sealed plastic bag condense mixture into a solid ball using your hands. Spoon small balls of dough onto plate or tray and flatten into a cookie shape.
Store balls/cookies in refrigerator, and enjoy!
