Having a craving? This simple recipe will satisfy any sweet tooth! No flour and no baking involved.
1/2 c. butter
1/2 c. milk, raw or organic
1 c. coconut sugar
1 tsp. vanilla extract
1 c. shredded coconut
2 3/4 c. oats, whole, dry, organic
1/2 c. cacao powder
Melt butter in a large saucepan. Add milk and coconut sugar. Set timer and boil for 5 minutes exactly. Turn off heat and stir in vanilla. Then stir in cacao powder, followed by shredded coconut. Finally, stir in oats until well coated. Place wax paper on counter and drop by tablespoonfuls onto paper. You will need to then use your fingers to compact them and shape them. They will take a few hours to harden and then you can place them in a container and keep them in the fridge or freezer. Makes 24 large haystacks.
