I love these no-bake cookies - they are really easy to make.
1/2 c. honey, raw
1/4 c. coconut oil
1/4 c. cacao powder
1 tsp. cinnamon
1/2 c. almond butter
1 c. old-fashioned oats
1 tsp. vanilla extract
Combine honey, coconut oil, cacao powder, and cinnamon in a saucepan. Bring to a boil, and hold for 3 minutes. Remove from heat, and stir in almond butter, oats, and vanilla extract.
Line a baking sheet with wax paper. Drop mixture onto the prepared baking sheet by the spoonful (should make 12 cookies). Move baking sheet to refrigerator for cookies to harden.
When cookies are firm, move to an airtight container with wax paper between layers of cookies. Store in refrigerator.
