No Bake Bites

These treats make a very satisfying snack/dessert, super healthy, and so delicious! Balls can be eaten plain or rolled in a fixing of your choice, or left unrolled stored in a container in the freezer. You might want to double or triple the recipe!


    2/3 c. almonds

    2/3 c. walnuts

    2/3 c. old-fashioned oats

    1/4 tsp. cinnamon

    1/8 tsp. sea salt

    1/4 c. honey, raw

    1 tsp. vanilla extract

    2 tbsp. chocolate chips


In a food processor, process almonds, walnuts, oats, cinnamon, and salt to a fine meal. Add honey and vanilla, and process just to combine. Next, add chocolate chips and pulse just to combine. Roll dough into balls using a tablespoon measuring spoon for required size. Place on a parchment lined cookie sheet and freeze until firm, about 45 minutes to 1 hour. Transfer to a covered container and store in the freezer. These can be eaten straight from the freezer, no thawing required.

OPTIONAL: If desired, roll balls in your choice of dry shredded coconut, chia seeds, hemp hearts, or dark coca powder, etc., placing them on a parchment lined cookie sheet. Place in the freezer until firm. Store in an air tight container in freezer.

Makes 18, a serving is 2.

NOTE: I've made these many times using both raw honey and pure maple syrup, both are excellent! I've also made these using pecans & almonds, as well using a combination of assorted raw nuts and seeds combined, excellent too! Mix and match nuts to your liking.

If choosing not to roll in trimmings, or not wanting to roll into balls, put the mixture into a container and freeze. Eat by taking out a tablespoon size using a butter knife. It's super easy to make multiple batches at one time while you're messing up the food processor anyways!
