Delicious mojito like tasting smoothie. Great way to get your spinach serving. I love it as my morning snack with nuts or yogurt on the side.
1/2 c. canned coconut milk
1 c. spinach
1/2 banana
1/2 lime
1 tsp. vanilla extract
1 hndfl. fresh mint
4 ice
stevia to taste
Combine first 5 ingredients in blender, and blend until well mixed. Then add last 2 ingredients, plus stevia if desired, and blend again until smooth. Enjoy!
