Minestrone Soup with Beef

This is my favorite soup right now. My kids love it and I make it almost every week for us.

Ingredients

    1 lrg. celery stalk, fresh, organic

    1 lrg. carrot

    1/2 med. onion

    2 tsp. coconut oil

    1 lbs. ground beef

    16 oz. canned navy beans

    28 oz. diced tomatoes, canned

    2 bay leaf

    3 clove garlic

    4 c. beef stock

    2 tbsp. tomato paste

Directions

  1. Dice celery, carrot, onion and garlic and set aside
  2. Melt coconut oil in large pot or dutch oven over medium heat
  3. Saute the diced vegetables (not the garlic) until soft (5-8 minutes)
  4. Turn the heat up to high and add the ground beef and garlic, cook until beef is browned
  5. Mix in the tomato paste
  6. If using canned beans, drain and rinse and toss into the pot
  7. Add can of tomatoes (juices and all), and the beef broth and bay leaves
  8. Let everything come to a boil, reduce heat to medium/medium high and simmer until liqud reduces by 1/3
