Mexican Rice

This is a delicious Mexican rice that is better than any we've gotten out at restaurants!


    1 1/2 tsp. coconut oil

    1/2 sml. onion

    2/3 c. long grain wild rice

    1/2 tsp. ground cumin

    1/2 tsp. chili powder

    1 tsp. taco seasoning

    1/4 c. fresh made salsa

    1 tsp. sea salt

    1 1/2 c. chicken broth

    1 clove garlic


Heat coconut oil in a large saucepan over medium heat. Stir in diced onion and saute until translucent. Add smashed and minced garlic, and saute quickly so it doesn't burn.

Pour the rice into the pan and stir to coat the grains with the oil. Mix in cumin, chili powder, taco seasoning, salsa, salt, and chicken broth.

Cover, bring to a boil, and reduce heat to low. Simmer for 20 to 30 minutes or until rice is tender. Stir occasionally.

Oh how we LOVE this rice! And you can change it up so easily, too. One time I used a can of Rotel tomatoes with green chilies instead of the salsa. Often, I'll add some black beans at the very end of the cooking time. Sometimes when I serve this I'll dice up some tomatoes and sprinkle it on top and also a few sliced green or black olives. This rice is so good and looks pretty on a simple bed of shredded lettuce too. Have fun with it. I hope that you love it as much as we do! :)
