Mexican Pasta Skillet

Great alternative for taco nights!


    1 lbs. ground beef

    2 c. fresh made salsa

    1 c. tomato sauce

    1 1/2 c. water

    8 oz. brown rice macaroni

    4 oz. mild cheddar cheese


In a large skillet, brown beef over medium-high heat for 8-10 minutes. Drain.

Stir in salsa, tomato sauce, and water. Heat to boiling. Stir in macaroni. Reduce heat; cover and simmer 12-15 minutes, stirring occasionally, until macaroni is tender.

Stir in cheese (optional), and serve warm.

Note: Use spelt, quinoa, or brown rice pasta.
