Mexican Lime Chicken Soup

Mmm... this soup is delicious!


    2 lime

    1/2 lbs. chicken breast

    1/2 tsp. sea salt

    1/4 tsp. black pepper

    2 tsp. coconut oil

    1/2 white onion

    3 clove garlic

    1 jalapeno pepper

    1 1/2 c. chicken broth

    1 1/2 c. water

    1 tsp. dried oregano

    1 med. avocado


Season chicken breasts with salt and pepper. Heat coconut oil in a large saucepan over medium heat. Add chicken and cook until browned, about 5 minutes. Remove the chicken from the pan (put on a plate). Add chopped onion to the pan and sauté until translucent, about 4 minutes. Add minced garlic and minced jalapeño and sauté until fragrant, about 1 minute. Add chicken broth, water, fresh squeezed lime juice (from 1 lime), and oregano. Put the chicken back in the pan. Turn up heat to high; bring the liquid to a boil. Skim off any foam that rises to the surface. When the liquid boils, reduce heat to medium low, cover partially, and simmer for 30 minutes. Remove the chicken from the pan, letting the soup continue to simmer. Shred the chicken into bite-size pieces, and stir it back into the soup. To serve: Put diced avocado and a couple lime wedges in a bowl. Ladle the soup into the bowl and enjoy!
