Mexican Cauliflower Rice

An excellent substitute for classic Mexican rice.


    1 sml. cauliflower

    1 tbsp. coconut oil

    1/2 sml. onion

    2 clove garlic

    2 tbsp. tomato paste

    1/2 c. chicken broth

    taco seasoning to taste


Grate the cauliflower using a box grater or a food processor. Set aside.

Heat coconut oil in a skillet over high heat. Add finely chopped onions and minced garlic. Sauté until softened and fragrant, about 2 minutes. Stir in tomato paste, and heat for another 30 seconds or so.

Add grated cauliflower to the skillet. Pour in chicken broth, and mix well. Stir in taco seasoning. Cover skillet, and cook for 3-4 minutes, until the liquid is absorbed.
