Delicious chili recipe! Not a fan of bison? Make it with ground beef or ground turkey instead.
1 lbs. ground buffalo
3/4 c. green bell pepper
1/4 c. onion
2 tsp. coconut oil
garlic powder to taste
14 1/2 oz. diced tomatoes, canned
1 oz. green chili pepper
15 1/2 oz. canned black beans
2 tsp. chili powder
1 tsp. ground cumin
sea salt to taste
4 oz. avocado
4 oz. mild cheddar cheese
Heat coconut oil in a pan over medium to medium-high heat. Add chopped green pepper, chopped onion, and garlic powder. Saute until veggies are tender. Add ground buffalo/bison and cook until no longer pink. Add green chilies, diced tomatoes, drained black beans, chili powder, cumin, and sea salt. Cook on medium high until it thickens to your liking. (I don't like my chili runny, so I let it summer for about 20 minutes, stirring consistently.) Divide into 4 servings, and top each with 1 ounce of cheese and 1 ounce of diced avocado. Yummy!
