Got this recipe from a friend but I altered it a bit. So yummy... even hubby liked it.
1 sprouted whole grain tortilla
1 tsp. coconut oil
8 oz. cooked chicken
4 tbsp. black olives
1/2 c. spinach
4 oz. feta cheese
1 c. roasted red pepper
6 artichoke hearts
Heat oven to 450°F. Put half of the coconut oil on cookie tray and other half spread evenly on tortilla. If you need a little more to get it to be a thin layer spread all over do so. Then put in oven for about 2 minutes to brown edges. Cut artichoke hearts and red peppers in pieces. Then place shredded chicken evenly over tortilla then add spinach, red peppers, olives, artichoke hearts, and finally crumble the feta cheese over the top. Bake in oven for about 6 minutes or until cheese is melted and food is heated throughout. Cut in half for two servings.
