Mediterranean Orange Spice Chicken Legs

    4 chicken leg

    sea salt & black pepper to taste

    2 tbsp. extra virgin olive oil

    1 tbsp. orange zest

    3 tbsp. orange juice

    2 tsp. ground cumin

    1 tsp. paprika

    1/2 tsp. ground coriander

    1/4 tsp. cayenne pepper

    1 clove garlic

    1/4 c. fresh mint


Zest the orange and squeeze the fresh orange to get 3 tablespoons of juice. Mince the garlic and the mint then combine the orange zest, orange juice, garlic, mint, olive oil, and spices for the marinade. Place chicken legs with skin on in a dish and cover with marinade; turn to coat. Cover and marinate refrigerated for 2-4 hours.

Preheat oven to 375'F. Place chicken legs skin side up on a parchment lined baking pan with sides or Pyrex 9x13 " cake pan. Brush w remaining marinade. Season to taste with salt and pepper.
Roast for 1 hour or until cooked through.

Note: use 1 tsp. dried mint if fresh is not available. Or substitute fresh or dried oregano.

**I found that a drumstick or a thigh alone each is about 4 ounces.
