Perfect dressing for any Mediterranean salads.
2 plum tomatoes
3 tbsp. lemon juice
3 tbsp. chicken broth
1 1/2 tbsp. extra virgin olive oil
1 tbsp. fresh oregano
sea salt & black pepper to taste
Combine tomatoes, lemon juice, broth, oil and oregano in a blender or food processor; blend or process until smooth. Season to taste with salt and pepper.
