Mediterranean Crunch Salad

Add a little grilled chicken or fish to this salad for your protein and your set. Serving is 2 cups. Only 1.5 healthy carbs for 1 cup of this delicious salad!


    1 c. kale

    5 Kalamata olives

    1/2 c. red onion

    3 tbsp. red wine vinegar

    1 tbsp. fresh parsley

    1 tbsp. fresh thyme

    15 oz. cooked chickpeas

    1 cucumber

    1 c. broccoli

    1 c. grape tomatoes


Combine all ingredients in a large bowl. Chill at least 1 hour before serving.
