Mediterranean Cashews

A wonderful protein-filled snack - one more for protein type vegetarians


    1 1/2 c. cashews

    2 garlic

    1 c. tomato

    1 tsp. dried oregano

    1/4 tsp. dried thyme

    1 1/4 tsp. sea salt

    1 pinch stevia

    1 tbsp. coconut oil


Soak the cashews overnight in water and cover by at least 3 inches. Drain, discarding the soaking liquid.

Put the oil in a frying pan and set over medium high heat. When hot, put in the garlic. Stir once or twice, until the garlic just begins to brown, then add the tomatoes, oregano and thyme. Turn the heat to medium, stir and cook for one minute. Now put in the cashews, salt and stevia. Stir to mix well and bring to a simmer. Cover and cook over low heat for 3 to 5 minutes. Serve hot.

Delicious when served with a green salad and bread.
