Lots of flavorful fresh veggies in these meatballs!
1 lbs. ground turkey
1/2 med. onion
2 clove garlic
1 med. zucchini
1 c. spinach
1 egg
Mince zucchini, onions, garlic, and spinach. Combine vegetables with turkey and mix in a medium bowl. Add egg and combine thoroughly. Form small meatballs with hands. Place meatballs in pan over low heat, and cover. Turn often for 15 minutes or until meat is cooked thoroughly. Makes 16 meatballs; one serving is 4 meatballs.
