I was thinking of Bisquick Impossible Pies and decided to make a healthier version.
1/2 c. spelt flour
3 egg
1 c. almond milk
2 c. mixed vegetables
4 oz. shredded cheese
1/2 tsp. sea salt
1 tbsp. seasoning or spices of your liking
12 oz. ground beef
1/2 tsp. baking powder
4 tsp. extra virgin olive oil
Preheat oven to 375 degrees. (190 C)
Mix together spelt flour, baking powder, eggs, milk and olive oil. Set aside.
In casserole or large pie plate layer:
Meat
Vegetables
seasonings and salt
cheese
Pour batter evenly over layers.
Cook in oven for 30 to 40 minutes.
Let it set for 10 minutes before slicing and serving.
The meat can pretty much be any cooked meat. (I used diced cooked chicken) Great recipe for leftover meat.
Choose your favorite vegetables. (I used mixed vegetables and portabello mushroons) Other good choices might be diced roma tomatoes, spinach, bell pepper, olives, etc.
I also used Mrs Dashs Tomato Basil Garlic and organic mexican blend cheese.
I'm estimating the proteins, carbs and fats. You will need to keep track of what you add and then divide by the number of servings. One cup almond milk = 1 Protein. If you use whole milk - 1 cup = 2 carbs. If you use coconut milk it's free so does not count towards fats, carbs or proteins. If you use coconut flour, it's a free item. I'm estimating the carbs based on the spelt flour and the vegetables divided by 8.

This made a very large pie. Would go well with a nice lettuce salad.
I'm thinking of making a bacon cheeseburger pie next.
If you try this let me know what changes you made. (My husband really liked this pie - it sure did not taste like diet food!)
