Massaged Kale Salad

This salad will turn anyone into a kale lover!


    3 c. kale

    2 tbsp. extra virgin olive oil

    2 tbsp. lemon juice

    1 clove garlic

    1/4 tsp. sea salt


Place chopped kale in a bowl.

Combine olive oil, lemon juice, minced garlic, and sea salt in a mason jar. Put the top on the jar, and shake until well blended. Pour mixture over the kale.

With clean hands, physically massage the kale for a minute or two (this helps break down the kale)

Enjoy immediately, or cover salad and refrigerate (this salad tastes best if it sits for at least an hour).
