Great side dish for Thanksgiving dinner!
1/4 c. water
1/4 c. butter
1/2 c. milk, raw or organic
sea salt & black pepper to taste
2 lbs. white or gold potatoes
Peel and dice potatoes. Put potatoes, water and butter into the crock pot. Season with salt and pepper. Cook on low for 7 hours or on high for up to 4 hours (start checking on it after about 2 hours). When the potatoes are done cooking, mash them and add milk until they're as creamy as you like. Keep potatoes warm on low until serving.
If you make these ahead of time, I would suggest adding some milk when you reheat them to get them back to the creamy consistency.
