Mashed No-Potatoes

I finally figured out the trick to making cauliflower taste like potatoes... High heat roasting! These take some time but your efforts will be well rewarded

Ingredients

    2 tbsp. coconut oil

    4 garlic

    sea salt & black pepper to taste

    1/4 c. Greek yogurt

    1/2 c. kefir, organic

    2 tsp. butter

    1/2 c. parmesan cheese

    1 tbsp. fresh parsley

    1 tbsp. fresh chives

    1 lbs. cauliflower

Directions

Preheat oven to 400 degrees in a bowl, place cauliflower, garlic, coconut oil, salt and pepper and mix together with hands and lay in a flat layer on a cookie sheet lined with parchment paper (for easy cleanup!). place in preheated oven for about 20-30 minutes, flipping once halfway through until cauliflower starts to brown and is soft and tender. Remove from oven and place into a food processor along with yogurt, kefir, butter, and half of the cheese. Process the mixture until the cauliflower is purred and no chunks remain.- this took about 2-3 minutes in my blender on high. Gently fold in the parsley and chives along with some more salt and pepper. Scrape mixture into a small glass or ceramic baking dish or pie pan and top with remaining cheese. Set your oven to the broil setting and place back into the oven and cook another 3-5 minutes until the cheese is bubbly. Note: watch the oven closely on broil, it will only take a couple minutes for the cheese to brown. If you are uncomfortable with the broil setting you can also preheat your oven to 450 and cook for 10-15 minutes as well. Serve hot with a protein of your choice!
