This is the best substitute to mash potatoes and in my opinion, it tastes better.
1 cauliflower
1/4 c. cilantro, bunch, fresh, organic
2 tbsp. butter
1/4 c. milk, raw or organic
sea salt & black pepper to taste
In a medium pot bring 3 cups of water to a boil. Add head of cauliflower cut up in pieces and boil for about 15 minutes. Drain and place in food processor together with the rest of ingredients. Serve as a side dish with anything you want. It makes a great snack too!
