A great summer option for barbequeing - super easy.
1/4 c. fresh mint
1 tbsp. balsamic vinegar
2 tsp. ground cumin
1 tsp. mustard seed, ground
2 tsp. honey, raw
1/2 tsp. sea salt
1/2 tsp. black pepper
2 lbs. lamb
Combine first 7 ingredients in a small bowl, stirring well. Place lamb in a single layer in a shallow dish; rub spice mixture evenly over both sides of lamb. Cover and refrigerate for at least 4 hours. Prepare grill. Place lamb on a grill rack coated with olive oil. Grill 4 minutes per side or until desired doneness. Serve immediately. Enjoy with quinoa and veggies.
