Maple Walnut Granola

Granola with a Canadian flare.


    1/2 c. maple syrup

    4 c. old-fashioned oats

    1 c. ground flax seeds

    1 c. pumpkin seeds

    1 c. walnuts

    1/2 c. dried cranberries

    1/2 c. dried currants

    1/2 c. coconut oil

    1/4 c. honey, raw


Preheat oven on to 200°F.

Place all of the dry ingredients (oats, ground flax seeds, pumpkin seeds, chopped walnuts, dried cranberries, and dried currants) onto a large roaster. Drizzle the coconut oil over the mixture and toss around to coat all dry ingredients. Pour on honey and maple syrup and stir to coat.

Place in oven and for 90 minutes stirring every 15 minutes, until toasty looking. Allow to cool and store in airtight container.

*I enjoy mine with almond milk and a sprinkling of chia seeds. *1 serving = 1/2 cup
