Warm and delicious gluten-free recipe for pear crisp. This was hubby and kid tested and they loved it!
6 med. pear
1 tbsp. arrowroot powder
1/4 tsp. cinnamon
4 tbsp. maple syrup
1/4 c. walnuts
1/2 c. old-fashioned oats
3 tbsp. oat flour
3 tbsp. coconut sugar
TOPPING: To make the topping, combine the oats, oat flour, and coconut sugar in a small bowl and stir to mix. Add 2 tablespoons of maple syrup, and stir until the mixture is moist and crumbly. Set this aside for now.
FRUIT FILLING: In a large bowl, combine the sliced pears, arrowroot, and cinnamon. Toss to mix well. Drizzle the remaining maple syrup over the pears and toss gently. Now add the chopped walnuts if desired. Place the fruit mixture in a 9 inch deep dish pie pan and sprinkle with the topping mixture.
Bake at 350°F for 35-40 minutes, or until the filling is bubbly and the topping is nicely browned. If the topping starts to brown too quickly (mine did), cover the dish loosely with aluminum foil during the last 10 minutes of baking. Serve warm.
