Mangu with scrambled eggs

Dominican style breakfast

Ingredients

    1 tbsp. extra virgin olive oil

    1 tbsp. butter

    1/2 c. water

    sea salt to taste

    garlic to taste

    3 plantain, fresh, organic

    black pepper to taste

Directions

First slice the plantains in half, then cut a slit in each of the pieces. Bring plantains to a boil. After 10 or 15 minutes drain the water and the plantain peel will come right off. Boil the unpeeled plantains for 10 more mins in minimal water until plantains are tender. Mash in the minimal water adding olive oil and butter. To make it smooth like puree add the 1/2 cup of cold water. Season with the garlic, pepper, and sea salt to your liking. I eat the Mangu (Plantain) with scrammbled eggs cooked in coconut oil. Some people like to eat their mangu with a red onion garnish. To make the garnish you just cook the sliced red onion in olive oil then add vinegar to it. You would put the olive oil and vinegar marinated onions on top of smashed plantains.
