This recipe is taken directly from eMeals, Paleo style. Delicious! I couldn't wait to eat the leftovers!
1/4 c. extra virgin olive oil
2 c. onion
1 c. red bell pepper
1 1/2 lbs. chicken thigh, skinless
Heat oil in a large saucepan over medium-high heat. Add onion and bell pepper; cook 5 minutes or until browned. Stir in chicken, garlic, ginger, salt and pepper; cook 4 minutes or until browned. Stir in mango, coconut milk and lime juice. Bring to a simmer; cook 10-12 minutes or until chicken is done. Stir in cilantro.
