Mango and Black Bean Salad

This is a delicious healthy salad!

Ingredients

  • 1 mango
  • 14 oz. canned black beans
  • 1 tomato
  • 1 yellow onion
  • 1/4 c. cilantro, bunch, fresh, organic
  • 3 tbs. water
  • 3 tbs. lime juice
  • 2 tbs. extra virgin olive oil
  • 1/2 tsp. ground cumin
  • 1/2 tsp. sea salt

Directions

Put all the vegetables in a bowl.

Dressing: Place reserved mango, water, lime juice, olive oil, cumin and salt in a blender and mix until all blended together.

Add dressing to chopped vegetables. Refrigerate until ready to eat!
