This is sugar and pectin free, no preservatives or additives!
1 strawberries
2/3 c. rhubarb, fresh, organic
2 tbsp. honey, raw
2 tbsp. chia seeds
Process all ingredients in a blender and then place in a sealed container in the fridge overnight. The chia seeds will swell up and make it nice and thick. If you like it a little more chunky, then chop up some fresh strawberries or other berries and add them through.
*You can replace the rhubarb with other fruits too. This is really nice with any seasonal berries, apricots, plums, nectarines and even peaches. Pears and apples are good too, but I like to add the juice of half a lemon to stop the fruit going brown.
I used this spooned on pancakes, homemade bread… a little spoon of it is nice in Greek yoghurt too!
