Basically it's an everything but the kitchen sink type of soup. I usually make it when some of my fresh vegies are getting close to spoiling and as you know organic anything is too expensive to let spoil
2 c. turkey, cooked, free-range, organic
1 tbsp. coconut oil
1/2 green bell pepper
8 c. water
1 bch. frozen spinach
3 c. vegetable broth
1 c. white mushrooms
1 onion
4 sml. carrot
2 c. broccoli
1 c. green beans
1 c. cauliflower
1 clove garlic
5 bay leaf
1 tsp. turmeric
1 tsp. ground coriander
2 c. white quinoa
melt coconut oil and saute the garlic, onions, green pepper, mushroom and then add the water, spices and remaining ingredients except for the diced cooked turkey and quinoa and bring to a boil. Once it's boiling add the quinoa (if not already cooked let simmer for at least 30 minutes) if your quinoa was already cooked immediately add your turkey. Let simmer and voila a beautiful tasty soup. I believe a cup would count as a carb and a protein.
