I've always had pizza and a glass of wine on Friday nights after a long week at work, so I created a pizza that fits BD. Hope you enjoy it as much as I do!
2 sprouted whole grain tortilla
1/4 c. Greek yogurt
1 tsp. garlic
1/4 c. tomato sauce
2 oz. mild cheddar cheese
1 c. mixed vegetables
1 tsp. fresh oregano
1/4 tsp. sea salt
3 oz. cooked chicken
6 cherry tomato
Mix the greek yogurt with the garlic and spread over one of the tortillas, then place the other tortilla on top of the one with the yogurt (this creates a thicker crust & avoids a sloppy pizza - the yogurt helps stick both tortillas together and adds flavor).
Add tomato sauce (i always have some homemade in the freezer), cheese, veggies, and chicken. Spread evenly to the very edge. Season with oregano and sea salt.
Cook on a pizza pan for about 12 minutes in a 400°F oven or until you see the veggies roast and the cheese bubble. Let cool a few minutes then slice and enjoy!
