A South Carolina favorite that will be the hit of any party!
1 tsp. red pepper flakes
1 tsp. peppercorns, black, organic
1 tsp. sea salt
1 tsp. garlic
1 tsp. celery seed
4 bay leaf
2 lbs. shrimp
1/2 c. extra virgin olive oil
1 c. apple cider vinegar
1 c. sweet onion
1/4 c. lemon juice
Combine all ingredients except shrimp in a glass, heat-proof container. Mix well. Peel shrimp and add to pot of boiling water. Boil for 2 minutes (the pickling will "cook" them the rest of the way) Add shrimp to the bowl and toss. Let them sit until at room temperature and then refrigerate overnight. Serve chilled.
