Lou Lou's Chicken Sausage

Homemade chicken sausage... this way you know EXACTLY what it contains!


    1 lbs. ground chicken

    1 tbsp. garlic powder

    1 egg

    sea salt & black pepper to taste

    1/2 c. breadcrumbs, made from sprouted whole-grain bread

    1/3 c. almond meal


Combine chicken, almond meal, egg, garlic powder, salt, and pepper in a large bowl. Divide mixture into 5 equal portions, and shape each portion into the shape of a sausage link (coat your hands in olive oil to make hands non-stick).

Place the bread crumbs on a plate. Roll the chicken links in bread crumbs for a very light cover/casing. Refrigerate for 2 hours if possible to set ingredients.

When ready to eat, cook the sausage in a frying pan using coconut oil (cook until browned and thoroughly cooked through).

Freeze remaining sausages in individual portions ready for breakfast use.
