Never let poor planning get the best of you ever again. It takes about 15 minutes to make, cleans out leftovers and tastes great!
1 tbsp. butter
2 c. celery, onions, and carrots
4 garlic
1 cooked chicken
sea salt & black pepper to taste
2 c. chicken broth
Over medium heat add butter and garlic into a skillet and saute for 1 minute. Add in the vegetables and saute another 5-10 minutes until veggies are soft. Add the cubed chicken and spices and let cook another minute to heat the chicken through. pour in the chicken broth and bring to a light simmer (another minute or so) and serve!
Variations: Chicken and Wild rice: Decrease veggies to 1 cup and add in 1/2 cup of cooked wild (or brown) rice with the chicken.
