This is a recipe my good friend worked up after trying several recipes we do not have the serving info on it. It is a great healthy bran muffin...
3/4 c. sprouted whole wheat flour
1/2 c. ground flax seeds
1/2 c. oat bran
1 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. sea salt
1 tsp. cinnamon
1 red apple
1/2 c. raisins
1 egg
1/2 tsp. vanilla extract
1/4 c. molasses, organic
1/4 c. milk, raw or organic
Preheat oven to 350, grease muffin tin ( I use a 6 muffin pan but you could make them smaller & use a 12). Combine all dry ingredients in a large bowl. Add egg, vanilla, milk & molasses. Mix. Add fruit. Once mixed, spoon into muffin pan. Bake @ 350 for 25-30 min or until toothpick inserted comes out clean. Cool about 10 min in the pan then remove muffins.
Variation: In place of apple & raisins Use 1 8oz can crushed pineapple 1 c fresh cranberries (I use frozen)
