Lentil Salad

Yummy lentil salad!


    15 oz. lentils

    1/2 red onion

    1/2 c. fresh parsley

    1/3 c. walnuts

    2 tbsp. extra virgin olive oil

    2 tbsp. red wine vinegar

    1 tbsp. dijon mustard


Mix drained and rinsed lentils, chopped red onion, chopped parsley, and chopped walnuts together in a large bowl. In a small bowl, whisk together the olive oil, red wine vinegar, and Dijon mustard to make a dressing. Pour the dressing over the salad ingredients and mix together. Serve at room temperature and enjoy!
