This vegan lentil loaf is an easy recipe for families on a budget. Enjoy as a Thanksgiving alternative to turkey, or as a tasty centerpiece to any dinner.
1 1/2 c. lentils
3 1/2 c. vegetable broth
2 onion
4 clove garlic
3 tbsp. coconut oil
2 c. long grain wild rice
1 tsp. sea salt
1/4 c. ketchup
1 tsp. dried sage
1 tsp. Italian seasoning
Preheat oven to 350° F.
In a large pot, simmer the lentils in vegetable broth about 30 minutes until cooked. Drain thoroughly and then mash until about half the lentils are mashed and half are still intact.
Sauté the onions and garlic in coconut oil for 3-5 minutes, or until soft.
Combine with lentils. Add rice, salt, ketchup or barbecue sauce, sage, and Italian seasoning.
Gently press the mixture into a lightly greased loaf pan. Drizzle a bit of extra ketchup on top if desired.
Bake for 1 hour. Allow to cool slightly before serving, as this will help the lentil loaf to firm up. Enjoy!
