Quick and easy wholesome soup perfect for a cold winter's day !
8 uncured bacon
1 c. onion
2 clove garlic
1 c. carrot
1 c. red lentils
14 oz. cooked chickpeas
14 oz. canned whole tomatoes, peeled
67 fl oz. water
1 c. chicken stock
sea salt & black pepper to taste
Dry fry the bacon in a large pan to release juices. Add onion / leek and garlic and cook until softened. Add the lentils and give the mix a good stir, then add the carrots, tomatoes, chick peas, chicken stock and water. Season to taste. Put the lid on and simmer slowly for about an hour. Yummy as a lunch, snack, starter, or even as dinner along with a salad.
