Lenore's Favourite Oatmeal

This is my absolutely favourite breakfast. After learning about better choices in the foods I eat, I created this yummy concoction. I like to use Rogers brand Steel Cut Porridge Oats because they have already added Oat Bran, Wheat Bran and Flax, but it is just as yummy with regular oatmeal. Sometimes I will cut up the frozen berries before cooking, but it isn't really necessary because they break up easily once they are cooked.

Ingredients

    2/3 c. water

    1 tsp. honey, raw

    4 oz. Greek yogurt

    1/3 c. cooked oatmeal

    1/2 oz. sunflower seeds

    1 c. frozen berries

Directions

  1. Place berries, seeds and water in a small pot and bring to a boil.
  2. Add oatmeal (and optional sweetener), reduce heat to minimum and simmer 10 - 15 minutes until desired consistency.
  3. Stir in greek yogurt and enjoy!

I don't usually add anything to sweeten this, unless I am using plain greek yogurt. I like it best without added sweetness and Vanilla or Honey flavoured greek yogurt. If you find it too creamy, add more sunflower seeds and less yogurt.
