This light and healthy dip is easy to prepare. Serve with your choice of crackers.
1/4 c. tahini
2 clove garlic
1/2 tsp. sea salt
1/8 tsp. cayenne pepper
1 cucumber
1 tbsp. fresh dill weed
15 oz. cooked chickpeas
1/2 c. lemon juice
Combine chickpeas (drained, liquid reserved), lemon juice, tahini, chopped garlic, sea salt, and cayenne pepper in a food processor; puree until smooth. (If too thick, add 1-2 tablespoons more lemon juice or reserved chickpea liquid.) Transfer puree to a bowl and fold in chopped cucumber and dill.
