Lemony Coconut Frosting

Yummy lemony coconut frosting for cupcakes, cookies etc. I put a bit of this on the coconut muffins I make and everyone loved it! :)

Ingredients

    2 tbsp. coconut flour

    1 tsp. vanilla extract

    1 tbsp. lemon juice

    3 tbsp. honey, raw

    1/4 c. canned coconut milk

    6 tbsp. coconut oil

Directions

In a food processor, add coconut flour (make sure you measure the flour exactly because more won't work well), vanilla, and lemon juice. Pulse to mix. Add honey and pulse to mix again. Add coconut milk and pulse again to mix. Then add coconut oil 2 tablespoons at a time. The mixture should get thick and creamy.

Scrape out frosting into a bowl and cover and refrigerate for several hours. It will thicken up with the chilling.

This makes approx 1 cup of frosting. Use one tablespoon per serving if you're just putting some on a cupcake, etc. Garnish with some grated lemon peel (optional).
